Biscoff blondies have taken the internet by storm, and for good reason. The warm, caramelised biscuit flavour of Lotus Biscoff pairs perfectly with the buttery richness of white chocolate blondies. Together they're absolutely irresistible.

What is Biscoff?

Lotus Biscoff is a Belgian speculoos biscuit spread made from caramelised biscuits. It has a warm, spiced, toffee-like flavour and a smooth, peanut-butter-like texture. You can find Lotus Biscoff spread in most New Zealand supermarkets in the peanut butter and spreads aisle. It comes in smooth and crunchy varieties — both work beautifully in this recipe.

The holidays in our house are hard, my oldest is a busy little boy and my youngest is alot younger than him, so the playing time is hard as they want and need different things! When the weather is miserable out, we find it harder it keep busy indoors while I also have to try and work!!

Somehow, when I suggest a day of baking, everyone is in and happy to share and help! Yay!

What You'll Need

  • 1 packet of Flour and Dough Fudgy White Chocolate Blondie Baking Mix
  • Eggs and butter (as per the packet instructions)
  • 4–5 tablespoons of Lotus Biscoff spread (smooth or crunchy)
  • Optional: crushed Biscoff biscuits to sprinkle on top

How to Make Biscoff Blondies

  1. Prepare your blondie batter as per the packet instructions.
  2. Pour the batter into a lined baking tin.
  3. Warm the Biscoff spread in the microwave for 20–30 seconds until it's pourable.
  4. Drop spoonfuls of Biscoff spread across the top of the batter.
  5. Use a skewer or butter knife to swirl the Biscoff through the batter — aim for visible ribbons rather than fully mixing it in.
  6. Optional: crush a few Biscoff biscuits and sprinkle over the top for extra crunch and texture.
  7. Bake as directed on the packet.
  8. Allow to cool completely before cutting for clean, fudgy slices.

Tips for the Best Biscoff Blondies

  • Warm the Biscoff spread before swirling — it makes it much easier to work with and creates beautiful caramel ribbons through the batter.
  • Don't overmix the swirl — you want distinct pockets of Biscoff flavour throughout, not a fully combined batter.
  • Don't overbake — the best blondies are still slightly underdone in the centre when you pull them from the oven. They firm up as they cool.
  • Add crushed biscuits on top — this adds a gorgeous crunch and makes them look bakery-worthy.
  • Flaky sea salt — a pinch on top before baking balances the sweetness beautifully.

Storing Your Biscoff Blondies

Store in an airtight container at room temperature for up to 5 days. These blondies also freeze well — wrap individual squares in baking paper and freeze for up to 3 months. Defrost at room temperature or warm briefly in the microwave.
