Frozen Pancake Bites — The Make-Ahead Breakfast Hack Your Family Needs
These are called all sorts of things in different parts of the world — but in short, they're small, fat little circles of absolute deliciousness that taste just like a pancake, cooked straight from frozen in minutes.
I saw this hack and I had to try it. With the holidays coming up, I've been sharing the things I do with my family to make life easier and more delicious — because Christmas for us is about taking it easy and eating way too much. These Frozen Pancake Bites fit that brief perfectly.
Batch make them on a Sunday, freeze them, and on Christmas morning — or any morning — you're frying up fresh pancake bites in minutes with zero effort. The kids love them, the adults love them, and you'll love not having to make pancake batter at 7am.

What You'll Need
- 2 eggs
- ½ cup (125ml) sugar
- 1 cup (250ml) milk
- 2 tablespoons (30ml) melted butter
- 2 cups (500ml) cake flour
- 4 teaspoons (20ml) baking powder
- ½ teaspoon (2.5ml) salt
- Optional mix-ins: chocolate chips, blueberries, banana slices, or any fruit you love
Method
- Beat the eggs and sugar together. Add 125ml of the milk and the melted butter and mix well.
- Sift together the flour, baking powder, and salt, then stir or beat into the egg mixture.
- Gradually stir in the remaining milk to form a smooth batter.
- Spoon the batter into freezer-proof containers — a silicone muffin tray or ice cube tray works perfectly. Add chocolate chips or fruit to each one if using.
- Freeze until solid.
- Once frozen, pop them out and store in a zip lock bag or airtight container in the freezer.
- To cook: place frozen bites directly into a pan on low heat. Once the bottom has melted and set, flip and cook the other side. Low and slow is the key here!
- Serve with your favourite toppings — maple syrup, fresh berries, whipped cream, or whatever your family loves.
Tips & Tricks
- Use small moulds — the whole point of this hack is cooking straight from frozen, so they need to be small enough to cook through properly. Ice cube trays are actually ideal for this.
- Keep the heat low — if your pan is too hot, you'll burn the bottom while the middle is still frozen. Low and slow gives you a perfectly cooked pancake bite every time.
- Save freezer space — once frozen solid, pop them out of the tray and store in a zip lock bag. Much more space-efficient!
- Mix-in ideas: chocolate chips, blueberries, sliced banana, raspberries, or a pinch of cinnamon in the batter for a festive twist.
Storage
Store in a zip lock bag or airtight container in the freezer for up to 1 month. I've done a full month and they come out perfectly every time.
