Funfetti Cookie Cake — The Easiest Celebration Cake You'll Ever Make
As if the Funfetti Sugar Cookie Mix couldn't get any better — meet the Cookie Cake.
The cookie cake is the perfect balance between making a cake and making cookies when you need a cake but don't have the time (or energy!) for one. I always feel the pressure to produce the perfect cake — probably because I used to be a cake decorator and home baker! But these days, I just want everyone to enjoy it, for it to look decent, and for us all to share in the memories and moments around it.
This quicker, easier version is just perfect. And honestly? The kids love it even more than a regular cake.

Why a Cookie Cake?
Cookie cakes are having a moment — and for good reason. They're:
- Faster than a traditional cake (no layering, no levelling)
- Easier to decorate (especially with little helpers)
- Absolutely delicious — crispy edges, soft chewy centre
- Perfect for birthdays, celebrations, or just a Tuesday
And when you use the Flour and Dough Funfetti Sugar Cookie Mix, the whole thing comes together in minutes. I made two — one that I decorated, and one that my son Ayden decorated himself. Stacked on top of each other they'd make the most gorgeous two-tier cookie cake. Watch this space!
What You'll Need
- 1 x Flour and Dough Funfetti Sugar Cookie Mix
- 1 egg
- 115g butter
- Two lined round baking tins (6 inch)
- Icing sugar or frosting of your choice
- Decorations — sprinkles, lollies, fresh fruit, whatever you love!
Method
- Mix up the Funfetti Sugar Cookie Mix as per the instructions on the back of the pack.
- Divide the dough ball in half and press one half into each lined baking tin, spreading it out evenly to the edges.
- Bake both tins at the same time for 12 minutes. Keep an eye on them from around 11 minutes — every oven is a little different!
- Once out of the oven, loosen the sides from the tin gently with a knife.
- Important: let them cool completely before removing from the tin. The cookie is soft and delicate when warm — patience is key or it'll break!
- Once fully cooled, decorate as you please. Icing, sprinkles, lollies, fresh berries — go wild!
Tips
- Little Maddy pressed one tin all by herself — this is genuinely a recipe kids can do with minimal help. 🥰
- Store in an airtight container for a few days — though in our house it was gone in record time!
- Want a two-tier cookie cake? Stack both layers with a thin layer of frosting in between for a showstopper.
- Swap the icing sugar for cream cheese frosting for an extra indulgent finish.
