  • 1 packet of Flour and Dough Original Bread Baking Mix
  • Eggs (as per the packet instructions)
  • Milk of your choice — dairy, almond, or coconut milk all work well
  • Butter or coconut oil for the pan

How to Make Keto Pancakes from a Baking Mix

  1. Prepare the batter using the Original Bread Baking Mix as a base — use slightly more liquid than the bread recipe to get a pourable pancake consistency.
  2. Heat a non-stick pan over medium heat and add a small knob of butter or coconut oil.
  3. Pour small rounds of batter into the pan — keep them small (about 8–10cm) as almond meal pancakes are more delicate than regular pancakes.
  4. Cook for 2–3 minutes until bubbles form on the surface and the edges look set.
  5. Flip carefully and cook for another 1–2 minutes until golden.
  6. Serve immediately with your favourite toppings.

Tips for the Best Low Carb Pancakes

  • Keep them small — almond meal pancakes are more fragile than wheat-based ones. Smaller pancakes are easier to flip and hold together better.
  • Don't rush the flip — wait until the edges are fully set before flipping. Patience is key!
  • Medium heat is your friend — too high and the outside burns before the inside cooks through.
  • Rest the batter — let it sit for 5 minutes before cooking. The psyllium husk absorbs liquid and thickens the batter, giving you better pancakes.
  • Make a big batch — these reheat well in the microwave or toaster, making them great for meal prep.

  • Fresh strawberries, blueberries, or raspberries with a dollop of Greek yoghurt

SOME TIPS TO GET IT RIGHT

  • Make your pancakes on the smaller side, ie 3 tablespoons - they tend to be easier to flip when smaller and don’t break

  • Make sure your pan is hot before you start - I was too eager and had to leave them too long and ended up burning the first batch

  • The pancakes freeze beautifully! Just thaw and re-heat - preferably back in the pan

  • They keep for a few days in an airtight container in the fridge
