Keto Pizza from a Baking Mix — Low Carb Pizza Base Recipe NZ

Pizza night just got a whole lot healthier. This keto pizza recipe uses our Original Bread Baking Mix to create a crispy, golden low carb pizza base that's gluten free, wheat free, and packed with flavour — without the carb overload of traditional pizza dough. If you've been missing pizza on a keto or low carb diet, this NZ keto recipe is about to change everything.

Our Original Bread Baking Mix is made with almond meal and psyllium husk — no wheat, no refined carbs, no compromise on taste. It's one of the most versatile keto baking mixes available in New Zealand, and this keto pizza base is one of the most popular ways to use it.

Why This Keto Pizza Base Works

Traditional pizza bases are made with high-carb wheat flour — a no-go if you're following a keto or low carb diet. This keto pizza base swaps wheat flour for almond meal, which is naturally low in carbohydrates, high in healthy fats, and creates a base that's crispy on the outside and satisfyingly chewy in the middle. It holds toppings beautifully and doesn't go soggy — a common problem with many low carb pizza alternatives.

This keto pizza recipe is perfect for:

  • Keto dinner ideas NZ
  • Low carb pizza NZ
  • Gluten free pizza base NZ
  • Easy weeknight dinners NZ
  • Keto family meals and meal prep NZ

What You'll Need

  • 1 packet of Flour and Dough Original Bread Baking Mix
  • Eggs and water (as per the packet instructions)
  • Olive oil for brushing
  • Your favourite pizza toppings — tomato sauce, mozzarella, and whatever you love

How to Make a Keto Pizza Base

  1. Prepare the dough using the Original Bread Baking Mix as per the packet instructions.
  2. Preheat your oven to 200°C fan bake and line a baking tray or pizza stone with baking paper.
  3. Place the dough on the lined tray and press out into a round or rectangular pizza base shape, roughly 5mm thick. Wet hands help prevent sticking.
  4. Brush the base lightly with olive oil.
  5. Pre-bake the base for 10–12 minutes until it's lightly golden and firm to the touch.
  6. Remove from the oven and add your toppings — tomato sauce, mozzarella, and your favourite toppings.
  7. Return to the oven and bake for a further 8–10 minutes until the cheese is melted and bubbling.
  8. Slice and serve immediately.

Keto Pizza Topping Ideas

The beauty of this low carb pizza base is that it works with virtually any topping combination. Here are some favourites:

  • Classic Margherita — tomato sauce, fresh mozzarella, fresh basil, drizzle of olive oil
  • Meat Lovers — tomato sauce, mozzarella, salami, bacon, ham
  • BBQ Chicken — sugar-free BBQ sauce, shredded chicken, red onion, mozzarella
  • Vegetarian — tomato sauce, mozzarella, roasted capsicum, mushrooms, olives, spinach
  • Garlic Prawn — olive oil base, garlic, prawns, mozzarella, fresh parsley
  • Pesto and Brie — basil pesto base, brie, sun-dried tomatoes, pine nuts

Tips for the Best Keto Pizza

  • Pre-bake the base — this is the most important step. Pre-baking ensures a crispy base that won't go soggy under the toppings.
  • Don't make it too thick — a thinner base crisps up better. Aim for about 5mm.
  • Use a pizza stone if you have one — it conducts heat more evenly and gives you a crispier result.
  • Go easy on the sauce — too much tomato sauce can make the base soggy. A thin, even layer is all you need.
  • Let it rest — give the pizza 2–3 minutes to rest after coming out of the oven before slicing. This helps everything set.
