Layered Brownie Cups — The Ultimate Guilty Pleasure Dessert

Who doesn't want something a little guilty but absolutely delicious? And why not pair both into one gorgeous layered cup?

These Layered Brownie Cups are made with our Chocolate Brownie Baking Mix — either using leftovers from a previous bake, or made fresh just for this. No judgement either way! I've made these a few times for the kids and once as a dessert when my parents came over for dinner. It's always a hit and does exactly the trick for something sweet after a meal.

The best part? You can prep everything in advance and just assemble right before serving — which makes it perfect for entertaining.

What You'll Need

Method

  1. Mix and bake your Chocolate Brownie Baking Mix as per the instructions on the packet. For this recipe, I baked mine in a larger sheet pan so the brownies came out thinner and baked more quickly. Let them cool completely.
  2. Whip your cream until it's really stiff and holds its shape well. Afterthought tip: fold through some crumbled Flake chocolate or Peppermint Crisp for an extra indulgent twist — Peppermint Crisp tart is made exactly this way and it is incredible!
  3. Make up your instant pudding or mousse according to the packet instructions.
  4. Cut your cooled brownies into small squares that will fit into your serving glasses — aim for at least a few pieces per layer.
  5. Now start layering! There's no wrong way to do this — it's completely up to you and how you like it. A suggested order:
    • Brownie pieces
    • Caramel
    • Pudding or mousse
    • Whipped cream
    • Berries
    • Repeat!
  6. Once assembled, pop them in the fridge to chill. I had mine chilling for a full day and they were perfect.

Tips

  • Assemble just before serving — the brownie pieces will soften and go a little soggy if they sit in the layers for too long. Prep all your components in advance and layer them up right before you're ready to serve.
  • Use individual glasses for a beautiful presentation — wine glasses, tumblers, or dessert cups all work beautifully.
  • Make it a trifle — one of our dinner guests pointed out this would look stunning in a large glass trifle bowl. They were absolutely right. Make a big batch and serve it as a showstopper centrepiece dessert.
  • Flavour variations: try Peppermint Crisp in the cream for a classic NZ twist, or add crushed Oreos between layers for extra crunch.
  • Berries: strawberries, raspberries, and blueberries all work beautifully and add a lovely freshness to cut through the richness.

Storage

This is the part I can never answer — my kids eat everything in record time (except spinach, go figure!). But as a general rule, assemble these just before serving for the best texture. All the individual components can be made ahead and stored separately in the fridge for up to 2 days.

These are the kind of desserts that make people think you've spent hours in the kitchen — when really, the brownie mix did most of the hard work. That's the Flour and Dough way. Enjoy!
